i made “pandemic pantry” toxic beans and rice tonight. i had checked out a couple of recipes on-line yesterday and i made some rice, ready. today i made it up from memory and what i had in-house, hence the pandemic pantry! the toxic part derives from toxic soup that i make for cold and flu. it’s toxic to viruses and bacterial infections.

recipe: mumma’s beans and rice.

2 onions chopped small
4 garlic cloves, smashed and chopped
3 carrots sliced. (leave unpeeled, just cleaned, if desired)
sauté several minutes in large pot
add 1 1/2 cups chicken broth or water or vegetable broth
1/4 to 1/2 tsp salt
1/4 tsp black pepper (a bunch of shakes)
1/2 tsp cayenne pepper or fresh hot peppers chopped, to taste.
1 tsp only carribean curry
simmer 10 minutes or until the carrots are done enough for you
add
1 can of black beans (or other) rinsed
1 can of peas or corn
2 or 3 cups cooked rice
heat another few minutes.
serve with plain bread and dress with sour cream if it’s extra spicy

i was so pleased with how amazing it tasted. even my son-in-law ate it all up and he’s not big on spice. it’s the “mere pois” that makes it great. my daughter, tamar, who trained as a chef, introduced me to the french version with shallots and carrots and celery and my mother, who was from england used carrots, celery and onions as her stew base.
did the children like it? no! of course not. indre had plain rice with milk and robin had a bologna sandwich.
after my success, i had enough energy to wash the dishes and leave the kitchen ready for morning!
now i have to lie down for a few minutes with indre (she’s eight) while she falls asleep. she likes me to make her bears talk.

  1. i hear you (mind's ear), giving the bears breathy squeaky voices. squeaky like the baby raccoons in your parents chimney in 1979. you spoke back to them that way.
